- Adds PUID as a values.yaml settings that sets PGID env-var

* setting enabled to true is a requirement
* setting empty-dir to false on all might be wise
* increase minor version numbers
* remove redundant empty dir setting
* Comment out appVolumeMounts from default values.yaml file
