Update prometheus chart (#3783)

Add additional values to the prometheus chart node-exporter values. * Add volume mount/mapping to enable monitoring of host ZFS filesystems. * Add host root mapping flag to correctly map mountpoints. * Update mountpoint filter to exclude a noisy of container/ZFS volumes.
